Render Modern Kitchen opens 24/7 gastropub concept at Aliante Casino

Aliante Casino + Hotel + Spa announced the opening of Render Modern Kitchen, a new 24-hour contemporary gastropub serving elevated comfort food, international dishes and handcrafted cocktails. The debut marks the latest milestone in Boyd Gaming’s ongoing property-wide transformation of the North Las Vegas resort destination.

Designed as an energetic neighborhood gathering space, the venue features an urban, rustic-chic aesthetic with patina brick walls, architectural steel, dark walnut paneling and a curated art collection inspired by street culture. A custom central bar sits at the heart of the dining room, accompanied by an adjacent performance stage for live entertainment and oversized flat-panel televisions positioned throughout the space.

Render offers breakfast, lunch, dinner and overnight menus daily. All-day breakfast options include an island breakfast with Portuguese sausage or Spam, country-fried steak and eggs, farm loco moco, strawberry shortcake French toast and buttermilk pancakes served with Vermont maple syrup.

The menu also features shared appetizers such as poke nachos served on wonton chips, candied bacon with maple bourbon dip, wagyu sliders, hand-stretched 12-inch Neapolitan-style pizzas and hot honey chicken breast sandwiches. For lunch and dinner, the kitchen serves roasted prime rib, Cajun pasta, Scottish salmon and beef short ribs, with dessert options including banana pudding and seasonal fruit cobbler topped with Lappert’s vanilla ice cream.

The beverage program complements the menu with specialty cocktails such as the blackberry bourbon smash, smoked old fashioned, espresso martini and the desert loom crafted with prickly pear and mezcal. A dedicated zero-proof menu showcases premium alcohol-free botanical and citrus infusions.

The launch of Render Modern Kitchen follows several major upgrades at Aliante, including the recent opening of Trattoria 57, an Italian dining concept named in honor of the 57th Wing at neighboring Nellis Air Force Base and a renovated Race & Sportsbook anchored by a 30-foot video wall.

Boyd Gaming officials indicated that additional resort enhancements remain on the horizon, including upcoming upgrades to the property’s movie theater complex to introduce a Regal Premium Experience theater, alongside further updates to the casino floor, beverage offerings and resort amenities.
